I was wondering if there was a resource that lists, explicitly the
available options for drawing charts? I have only been able to find bits
and pieces via examples, but an actual list that runs through all options
would be nice. If not, perhaps we can start one here.

Have you found the Configuration Options section of each individual chart
type?

Oh wow, thank you. That's exactly what I was looking for. I had been
looking at the interval chart type which lacks this kind of breakdown. I
imagine its fairly consistent throughout chart types though. At least for
common things like plotting area, colors, etc.
